Chicken Fried Rice

This simple Chicken Fried Rice Recipe will make you feel like a spring chicken again!! Try it!!


 2 pounds of chicken breasts

 1 cup of CoccoMio 🥥 Coconut Oil

 1 large (or 2 small) onion cut into cubes

 Himalayan salt, to taste

 3 cups of Basmati type rice

2-16 garlic cloves, pressed

8 organic eggs

 1-2 tablespoons of organic fermented soy sauce

 2 teaspoons of toasted sesame oil

 Freshly grated ginger (to taste)

 1 Kg of frozen mixed vegetables of your choice

 Black pepper, to taste

 Chopped green onions (optional)

 Black or white sesame seeds, to taste (optional)

Recipe Directions:

➡️ Cut the chicken into small cubes (1 to 2 cm).

➡️ In a wok add the coconut oil, onions and chicken and add salt. Cook over medium-high heat until the chicken is well cooked. Add the garlic and ginger while the chicken is cooking.

➡️ Add frozen vegetables. Cook over medium-high heat until the vegetables are cooked, about 10 minutes, cover the wok. While the vegetables are cooking, break all the eggs in a bowl.

➡️ Divide the vegetables and the chicken on one side of the wok and pour the eggs on the other side of the wok. Cook the eggs and add salt and pepper. After about 5-10 minutes, incorporate the eggs to the rest of the ingredients.

➡️ Separately cook the rice and add it together with the soy sauce and sesame oil. Stir to combine completely.

Quick tips:

The recipe can be easily divided in half or in quarters for the desired portions.

This recipe can also make a vegetarian version if you prefer, simply remove the chicken breasts from the ingredients. It will still be delicious and the Cock-a-doodle-do will thank you!
